Production of Moet and Chandon : Expertise and Lifelong Commitment to Excellence

Moet & Chandon wines are produced in concerted efforts by a preeminent team of some ten Oenologists, each with complimentary experience acquired on a wide range of wine planting regions throughout the globe. The driving forces of the team are its shared expertise, its collaborated sensitivities and its underway commitment to keeping abreast with the lastest trends, in particular through travelling and meeting with fellow experts in the field. The Chef de Cave, who leads the team, must guarantee one all-important objective is achieved: producing Complete Well-rounded and Radiant wines. Indeed, it is a guiding aim, which defines the Oenologists’ decisions on which the wines final shape will depend.

 

And now we will have a brief look at the production of Moet and Chandon Champagne month by month. And I have divided the report of Moet and Chandon Champagne into three articles, and you will have a clear look at it in the following three days.

 

In autumn October is devoted to leaf Shedding- At the end of October, the vine would be  prepared for winter; its leaves are tinged with an autumnal hue one after another before falling off. The slopes of the champagne landscape thus take on a golden and purple appearance.

 

November is dedicated to the pre-running of wine-making. In November once the majority of the leaves have been pelt, the vine must be prepared for pruning. This work, which involves necessary clearing and cleaning, is generally laid out in a mechanical and rigid way to ensure the precision, although it has to be done by hand if the vines are located on a particularly steep slope.
